Day 3 of the vegan challenge for our nutrition project at school. I’m happy that I did all that cooking and preparing on Sunday, as staying vegan is now easy.

I slept in today, so in order to still have a productive day, I needed a quick and easy, yet filling and fulfilling breakfast. So I made a quick avocado salad. It doesn’t get any easier than this!

Here’s the recipe:

1 avocado
3 tbsp medium hot garden salsa

Cut avocado in half, remove the pit, cut it in little squares/cubes/dices – whatever you want to call it, and remove them with a spoon. Add 3 tablespoons of medium hot garden salsa (I use the one from Costco, really like the flavour) and mix. Done! The salsa has enough salt, pepper, spices, onion, and green peppers so that you really don’t have to add anything else. Enjoy as is (eat with a spoon – like me), or on a tortilla, crackers, flatbread – anything that you fancy!
