If you want to succeed at anything you do, you have to prepare. This applies to school work, sports, your business, anything. Think of an athlete, and the countless hours of training he / she has to put in to have an excellent performance in ONE game, or ONE competition.

The same applies to being and staying healthy, having a healthy lifestyle. The more your prepare, the easier it will be to stay on track. So on Sunday, before starting the vegan week, I prepared several dishes for the coming days, to make it easy to eat something healthy when I’m in a time-crunch.

I have combined recipes I had found in the last few years, and also added some ingredients I thought would give the chips a nice twist. Here are the details:

1 bunch of organic kale
1/2 cup almonds
1/2 cup cashews
lemon juice from 1 lemon
1/2 red onion
4 garlic cloves
1/2 red pepper
1/2 tsp salt
1/4 tsp pepper
4 pieces of sun-dried tomato
1 inch grated ginger
3 tbsp nutritional yeast

First soak the sun-dried tomatoes in warm water for 15-20 minutes, while you prepare the other ingredients. Wash and drain the kale, then break the leaves off into bite-size pieces and place in a big bowl.  Place all other ingredients in the Vitamix, add the sun-dried tomatoes and some of the water they were soaked in, and blend. If the mixture is too hard, add some more of the water. The consistency of the mixture has to be like a thicker sauce. Pour over the kale pieces and rub in with your hands, until the mixture is evenly spread and all the kale pieces are coated.

Place on a baking sheet in a thin layer and bake at 200 F until they become crisp, for about 3-4 hours or longer – you can check if they are dry and crisp. Half-way through turn the chips, one by one. This is important if you want to have nice chips. I didn’t have the patience to turn them piece by piece, so mine clumped up, as they were still moist. But the taste is the same, and I just have bigger chips 🙂

You can also put them in the dehydrator, at 170 F, and leave them for 12-16 hours – probably no need to turn them, as the dehydrator trays make it easy for the warm air to be evenly spread.

These kale chips are a perfect and nutritious snack on-the-go, when you feel like snacking and want something healthy.
